Duck Liver, Salt et Pepper

The day before eating, put the jar into the fridge
Take it out an hour before serving
Remove the duck liver carefully from the jar and discard the fat with a warm cut

Serve with a sweet wine like Cotes de Gascogne Moelleux or Sauternes
